Canned strawberry processing technology

1, raw material selection

After removing the unripe, overripe, pests, and rotten fruit, select the varieties with dark red color, high hardness, small and small seeds, uniform size, and rich aroma. The canned fruit thus produced has a red fruit shape, a complete fruit shape, a toughness, a clear and bright red juice, a strong original fruit flavor, and a sweet and sour taste.

2, cleaning, blanching

The selected fruit will be washed with flowing water, drained, and immediately put into boiling water for 1 to 2 minutes. The fruit will be soft and not bad, the blanching time will vary, depending on the variety and maturity. The bleaching liquor should be used continuously to reduce the loss of soluble solids in the fruit.

3, canning

After blanching, remove the fruit and drain the water, fill it with cans, and inject 2 to 30% hot mash.

4, exhaust, seal

The filled cans are sent to the exhaust cans for venting. When the can's center temperature reaches 80°C, sealers are used to seal them immediately.

5, sterilization, cooling

The sealed cans are immediately sent to the sterilizer for sterilization and then cooled to 40°C.

6, insulation, inspection

The cans were fed into a 372°C heat preservation store and kept in heat for one week for inspection. The defective products such as fat cans, drain cans, and turbid mud cans were rejected, and the qualified products were put into the storage box.

In order to overcome the problem of fruit fade and softness after strawberry canning, 300 g of pomelo empty strawberry fruit can be used to inject 30% sugar-containing black currant natural juice as a filling liquid and evacuated liquid. The canned strawberry produced in this way has beautiful color, full fruit, non-broken, soft, good appearance, unique aromatic flavor, sweet and sour palatability, and excellent taste.
